Peaches!!!


I have taken a break from the blog for a few weeks, continuing to enjoy the summer. Hiking, biking, time with friends, sunshine! A few small snags in the form of a roof leak and a little tax issue have not slowed me down much - life is too good to worry overmuch about what can't be avoided. Just have to steer around those blocks in the road as best I can.

It is peach season. The back yard is full of the whirr of hummingbirds interspersed with the gentle plop, smack, plop of peaches and apples falling faster than anyone can catch them. It is a never ending job to keep up with the fruit at this time of year - cobbler, pie, freezing, drying, giving away.... I'm working as fast as I can!

In case you are in the same situation or just want something delicious to do with summer fruit, try this recipe which takes less than 10 minutes to set up and 35 to bake:

Peel and slice 6-8 peaches (I think you could use strawberries, blueberries, whatever you like)
Melt 1 stick of butter in an 8X8 pan, arrange fruit over melted butter and set aside while you....
Mix 1 cup flour, 1 cup sugar, 1 tablespoon baking powder and stir in 3/4 cup milk.
Pour batter over the fruit, DO NOT stir.
Bake in pre-heated 350 degree oven for 35-40 minutes or until golden brown.

It is delicious and easier than pie.

PS - to peel ripe peaches easily just cover them with boiling water, let stand about 2 minutes and the skins slip right off.
